Miso-Marinated Black Cod

Miso-Marinated Black Cod

Serves 2-3

Ingredients

2-3 black cod fillets* (approx 500g)

Marinade:
• ¼ cup sake
• ¼ cup Mirin
• 5 tablespoons white Miso paste
• 3 tablespoons sugar

Method:
1. Mix the marinade ingredients thoroughly in a sealable plastic container. Set aside
a small amount for serving later.
2. Pat the fish fillets dry with paper towel and place into the container with the marinade. Seal and leave in the refrigerator overnight or for 24 hours.
3. Preheat oven to 180°C and pre heat
a grill at the same time.
4. Remove fish from the container and lightly wipe off any excess marinade using your fingers (don’t rinse it off). Lightly grill fish on both sides
until brown.
5. Transfer fish to the oven and bake
for 10-15 minutes.

To Serve:
6. Thicken the marinade that was set aside with a little corn starch and reduce over heat. Place the fish on a plate and drizzle the thickened marinade around the fish.
7. Serve with steamed rice and asparagus or sautéed spring garlic
* If Cod is not available try salmon,
sea bass or rockling
